Killing It: An Education As I sit here, typing away on my computer, I can't help but think about the journey that led me to this moment. It's a journey that started with a sense of disillusionment and uncertainty, but ultimately led me to find my true calling in life. My name is Camas Davis, and this is the story of how I became a butcher. I was once a successful magazine writer and editor in the food world, living in New York City with my boyfriend. But as time went on, I began to feel unfulfilled and restless. The work I was doing wasn't bringing me the satisfaction I desired, and I found myself longing for something more meaningful. So when a friend told me about Kate Hill, an American woman living in Gascony, France who ran a cooking school and took in strays in exchange for painting fences and making beds, I knew I had to go. It sounded like just what I needed - a chance to learn a new skill and take control of my life. With nothing to lose, I bought a plane ticket and set off for France, not knowing what lay ahead. When I arrived, I was greeted by the Chapolard brothers, a family of Gascon pig farmers and butchers who were willing to take me under their wing. They taught me the art of butchery, showing me the importance of pleasure, compassion, community, and authenticity in their craft. At first, it was tough.
